You may use higher level requirements as optional requirements with adult approval.
Penguins: Do three requirements including the one starred and two optional.
_____*1. Make a green salad by tearing larger leaves or washing & draining small leaves. This can be a one-person salad or a larger one. Garnish the salad with at least one food of a contrasting color.
Otters: Do four requirements including the two starred and 2 optional.
_____*1. Do Penguin #1. Make sure you also have at least two different textures OR tastes (bland & salty, sweet & sour) in your green salad.
_____2.* Discuss knife safety. Make a vegetable salad that includes some cooked vegetables easy to cut.
Dolphins: Do five requirements including the two starred and 3 optional.
_____*1. Do Otter #1 & 2.
_____2.* Learn how to cut a wedge of iceberg lettuce and enhance its presentation. Make a fruit salad without adding any sugar to the fruit.
Butterflies: Do six requirements including the two starred and 4 optional.
_____*1. Do Dolphin #1 & 2.
_____2.* Make a main dish salad that includes a full serving of meat (or complimentary proteins for vegetarians).
Eagles: Do seven requirements including the two starred and 5 optional.
_____*1. Do Butterfly #1 & 2.
_____2.* Make a gelatin salad from plain gelatin or a flavored mix.
Owl: Do 9 requirements including the 2 starred:
_____ 1. * Do Eagle requirements 1 & 2
_____ 2. * Teach someone how to do a skill from this badge or teach some knowledge about this badge to someone. You can teach kids, your spouse, seniors, anyone, just as long as you are sharing your new found knowledge. If for some reason you cannot teach what you have learned to someone else, you may choose an additional 2 optional requirements instead.
_____3. Discuss the nutritional value of salads. Is there anything you can do to increase the healthfulness of standard salads? What is the nutritional difference of dark vs. light green leaves? What is the nutritional difference between cruciferous vegetables and those from other families?
_____4. Discuss how to store and keep cold various kinds of salads. What are the hazards of not having your salad cold enough? Can you think of any salads that can be served warm? What are the disadvantages and advantages of different kinds of storage containers?
_____5. Think of all the pros and cons you can regarding making individual salads versus salads in a large bowl. Which ones are easiest to garnish? Compare the price of salad bowls with serving utensils and individual salad plates.
_____6. Develop your talent at making gelatin salads. Make at least 2 of the following:
- vegetable salad with gelatin
- fruit salad with gelatin.
- layered gelatin salad.
- molded gelatin salad and turn it out onto a plate or serving dish.
_____7. Practice making garnishes for your salads. Learn at least one you have never made before. Make garnishes from fruits or vegetables in at least three basic shapes and in at least three different colors.
_____8. Learn how to make your own salad dressings. Butterflies - Owls need to make at least one oil-and-vinegar style dressing and at least one containing egg yolk.
_____9. Be able to identify by sight and taste 3 different kinds of greens such as kale, chard, tat soi, mache, endive, butter lettuce, spinach, miner's lettuce, curly dock, cabbage, romaine lettuce, arrugula, New Zealand spinach, etc. (Otters need 4, Dolphins 5, Butterflies 6, Eagles 7, and Owls 9.)
_____10. Learn to identify by sight and taste 3 different foods that add a sour taste to a salad such as grapefruit; pickled cucumbers, okra or beets; sauerkraut; curly dock; Granny Smith or Pippin apples; kiwi; rhubarb, etc. (Dolphins need 4, Butterflies 5, Eagles 6, and Owls 9.)
_____11. Visit a restaurant that has a large salad bar. What would you do to give the bar more eye appeal? Could you enhance the nutritional value of the offerings? Does the restaurant do a good job keeping everything fresh and clean? If you think you have a valid criticism or a wonderful suggestion for the restaurant, write the manager a letter.
_____12. Make at least one salad for a shut-in or a large one for a fund-raising event.
_____13. Choose ten fruits or vegetables and rank them according to content of vitamin A, fiber, vitamin C, and antioxidants (look for the ORAC value). Share your four tables with other troop members.
_____ 14. Make a side salad such as a potato salad, pasta salad, rice salad, couscous salad, etc.
